Friday, August 20, 2021 - My final bottle of this so it's time to reload again. Like the previous two, a base of 2014, disgorged 09/2018, using biodynamic approach. 35% Chard, 65% Pinot Noir. 40% done in wood. We polished off about a 1/3rd of the bottle tonight, and it seemed a little heavy to me in texture. I admit that my palate has been off for the past few weeks, and although improving, it's not all the way back so take this note with some skepticism. Peach in color, as well in the wine's flavor, along with a raspberry cream, strawberry, mint and a lick of saline from the Verzenay chalk, I assume. Plenty to drink over the next few days, as I stoppered it up with the snap closure so we should be good with CO2 and another view into the wine tomorrow, even into Sunday.
