Saturday, August 28, 2021 - Very lucky so far to have tasted this year Chateau Suduiraut 2007, 2001, and 2005, all from 375 mL but during different times for each (having those side by side would have been legendary). Of the 3, I would say 2005 is my most favorite so far, cementing this producer quickly as one of my most favorite premier cru Sauternes.

Lightly chilled is the best serving temperature, but once you give it 5 to 10 minutes in the glass it blossoms with a range of dried fruit like apricots, peach, wonderful floral notes, honey and just the right pitch of botrytis (you find more of that note in 2001), but without that gingery spice found in some other vintages. The viscosity and texture are outstanding, very thick and delicious mouthfeel, yet not cloyingly sweet (although that is subjective). This can easily age for longer, but it is in such a delightful spot right now, and is so incredibly sexy. For some interesting reason, and perhaps it is a function of the vintage, much like Chateau d'Yquem 2005, I found this Suduiraut 2005 also fairly easy to pair with certain desserts, so long as the dessert is not too sweet.
