Saturday, January 29, 2022 - Mega savoury on the nose, with crusty bread, yeast, buttered brioche, steely minerality, almost a waxy quality, also fresh apple. Amazing tart acidity. Red apple skin. Mouthwatering and long apple then savoury finish. I love the freshness on the palette. Also love that it’s not excessively fizzy. Maybe some lemon zest. So complex and balanced.
