Thursday, February 3, 2022 - Well aged, drinking really well. Rough edges have mellowed, if there were any. At a beautiful spot. Maybe at peak. It’s just perfect now.
*2nd night even better.
*10th night. Has gotten more dense and concentrated. A mineral, aged soy sauce element has developed.
