In the mouth, fresh and clean acidity in the opening, lime, peaches, and pineapple. A touch of mineral and herbaceous basil and fennel come through in the mid and lingers into the finish. The fruit warms up and grows sweeter, bringing more peach and a floral touch while the acidity wears off in the finish.

EDIT: I tasted this together with a handful of other Finger Lakes dry rieslings and said in my comparison that the Hillick and Hobbs is probably the "easiest drinking" of the bunch as it is a bit sweeter than the others, however it was my second favorite overall, as is still pretty tight and focused.
