Sunday, June 11, 2023 - Drinking really well right now to my palate. It had about an hour of air while I cooked dinner, but otherwise, no decant, just pop - then an hour later - pour. Fruit was both subdued and yet fully present, unfolding into a deep, round, nuanced mouthful of goodness. Has some enjoyable glycerin-y texture lurking in there too (which in my limited experience, I would normally associate with certain Pinot Noirs.) Did really well with my sweet potato gnocchi/organic pasture-raised sausage dish (which featured lots of sage, garlic, etc.). Also doing really well as a sipper after dinner. Sure seems it has plenty more life left, if properly cellared. Now I wish I had another one ...
