Wednesday, April 18, 2018 - Domain Vincent Dauvissat 2016 Chablis (Chablis, France): Tasted blind. Deep yellow. Honey, camomile, and orange. Beautiful roundness, flavors of citrus and soil. Acidity was average which caused me to guess a riper vintage such as 2005 or 1995. Nobody got the vineyard, and we were all surprised that it was an '04. I don't think I've ever had a Sechet this old, and it was remarkable to see how a wine so lean in its youth can gain so much flesh.
