Opened at Taillevent and singing immediately with lemon, clam, and seaweed, fresh and slightly tertiary at the same time. Captivating, delicious. Drinking perfectly now.

Smoke show on the nose. Rich, oily, but overall clean and pure. Fresh and intense, quite striking. Showing good development and weight. Complex and detailed but recall being more impressed with the combination of freshness and weight / power.

Domain Vincent Dauvissat 2016 Chablis (Chablis, France): Tasted blind. Deep yellow. Honey, camomile, and orange. Beautiful roundness, flavors of citrus and soil. Acidity was average which caused me to guess a riper vintage such as 2005 or 1995. Nobody got the vineyard, and we were all surprised that it was an '04. I don't think I've ever had a Sechet this old, and it was remarkable to see how a wine so lean in its youth can gain so much flesh.

This took time to open up and needed lots of air to really show anything beyond a tight and youthful classic Chablis. Was better the following day and thoroughly enjoyable but really needs another 5 years at least. Always good stuff.

Decanted and poured, this wine gave an excellent showing. The aromatics offer youthful notes oyster shell, chalk, floral and citrus notes with an underlying hint of maturing elements. This wine shows clarity and precision. The color is a youthful, vibrant light to medium yellow. The light to medium bodied palate shows focus and detail. Acidity remains on the medium length finish. Based on this bottle this wine seems to be at or around its peak. It should continue to drink well over the next 5 years.

Glorious Chablis, light gold color, an array of exotic notes on the nose -- candied lime, white flowers, antiques, paraffin, spearmint, ocean foam.. Unctuous almost a tad of residual sugar but not distracting. Nice.

Showed much more classicly Chablis next to an '06 Raveneau. Much more minerally, wet slate notes, pear, truffle, saline, candied lemon. Brilliantly clear and youthful.

Nice showing. Lots of Chablis wool and minerality. While the palate is clean, as the wine airs, it becomes even clearer. Sarah says that this is showing some signs of advanced development, although we both agree that there is no premox here. I find it to be right in the zone, not especially advanced. Has very nice definition, and the sides have been smoothed out and the acidity tempered by time in the cellar. However, there is still a lot of acidity in reserve, and a terrific savory/salty finish. Very good length. Lunch with Sarah K. at Rothmann's.

So much more restrained and closed compared to the 2005 Forest and clearly in need of serious cellaring from here. A bit of bitter lemon juice with a hint of salt but that's pretty much it. It's probably all there but right now it's a wait and see with this wine.

Very nice, good clarity, nose of apple and peach, flinty with a hint of crushed stones. Great fruit, and good long finish. Ate with Lobster, paired nicely

Steely, crisp, with hints of lime. Thick, mouth coating, without an ounce of heaviness. Beautiful wine with a tremendous finish. Enjoyed with seared scallops in a citrus and shallot sauce.

A classic minerally citrus nose and palate experience. This wine is what I expected --- an enjoyable wine for a hot summer day. It fully met the "need"!

A wonderful chablis with joy on the nose and wonder on the tongue. As you can read, this is a wine at the low end of outstanding. Still outstanding...enjoy!

From .375. With crabcakes- faintly colored yellow- opens up very austere, but with about 1/2 hour in the glass, a wonderful nose of lemons, green apples and some matchstick comes out. The palate is very well built- nice richness on a great acidic frame with a long lemon finish- a terrific wine tonight.
