Saturday, February 26, 2022 - Consumed at Restaurant Les Avisés in Avize. Degorgement April 8th 2021. A superb and legitimately considered unique champagne. Full golden, but lively colour. On the nose a heady cocktail of dried exotic fruits (apricot), french oak spice and sweet caramel. In the mouth the wine manages to be richly textured with big legs in the glas and also very lively due to great acidity and a well mannered perlage. Chalky minerality and some mushrooms on the finish. Despite being extra brut it is neither strict or austere, just perfectly balanced. The most important thing for me: While this is a different kind of champagne it is also a most enjoyable one.
