Wednesday, February 21, 2018 - Dinner at Booth One (Chicago, IL): This is a proper Napa cabernet, sitting right in the prime of its drinking window. The fruit here is Napa style, with its ripeness, but there is also a really good bit of dustiness here as well. Truthfully, this almost seems young, as there are barely secondary characteristics here. The acidity is there, and even though the fruit shows really ripe here, this doesn't feel over the top at all. This is what I want when I open a bottle of Napa cabernet.
