Saturday, January 16, 2016 - Opened two hours, recorked, brought to dinner at Grey Plume in Omaha where it was decanted for an hour and consumed over 2 hours. Nose: Medium-plus expressiveness, sweet tobacco, fresh tar, saddle leather, and choke cherry. Palate: Medium bodied, cherry and tobacco attack with just the right amount of acid appearing through the mid-palate to balance out perfectly resulting in a stimulating mid-palate lift, earthiness and spice join in the back-end contributing to a lengthy finish. The balance and flavor integration during this showing tell me this wine is ready now. It paired perfectly with the Ox Tail ravioli and even performed well with the chicken roulade dishes the Mrs and I enjoyed.
