Wednesday, July 29, 2020 - The apertif for a long, boozy lunch - this was a lovely mix of pear, some lime and yeast. Really enjoyed the minerality and the mouthfeel, buffered by medium acidity (for champagne). Young and will most definitely improve with age, but what a gorgeous drink already. Kudos to Taittinger - never a bad vintage of Comtes. Opened one hour prior to lunch and drank over 2.5 hours.
