Thursday, June 10, 2021 - Wine Night in Charlotte -- Cork Vault Bottle Share Returns! (Charlotte, NC): Opened to pair against the David Arthur; splash decanted and impatiently waited ~30 minutes before sampling. The nose was opulent and fruity: black cherries and dark fruits. Silky smooth on the mouthfeel, the wine was delicious but had a lot of baby fat still on it. Flavors of cassis, blackberry, and tar with notes of dusty tannins. This was a “meal wine” long after most people had finished eating. When I grabbed a few bites to pair with it, the wine evolved nicely with greater complexity more consistent with a Mike Smith wine. Dark with a lot of sediment the wine almost certainly needed another hour to fully open and definitely filter it. A great wine that needs to be treated right (2 hour decant, filter sediment, pair with hearty meats).
