Thursday, July 8, 2021 - Blind Tasting with the guys (Maison Cafe in Dana Point, CA): Forgot to get the disgorgement info off the back label. This was the WOTN for everyone at the table. The freshness and structure on this wine fooled the table, as they guessed the wine to be far younger than it actually is. Tangerine and green apple form around a citrusy core, with the chalk coming through into the finish. One guy at the table called this 'elegant' and I would agree. There is a a great amount of complexity and depth in this wine, and with air the slate and lime really come through and shine. At 15 years old, this is fresh and lively, yet balanced with great further potential. What a beautiful bottle of CdC!
