Tuesday, November 23, 2021 - Finally settling down into a mature phase. In the glass, rich, clear golden yellow. On the nose, lemons, toffee, and a hint of smoke. On the palate, leading with citrus, along with almost-burned sugar, oak, and a sprinkle of thyme, paired with a smooth, almost unctuous texture, which carries through the mid-palate before the unresolved tannins finally announce themselves on a long finish. None of our DuMOL chards usually survive long enough to reach this phase of evolution, but perhaps I should make a point of staying away from the last bottles a bit longer...
