Monday, January 16, 2017 - Annual Yak and Truffle Dinner; 1/15/2017-1/16/2017 (Newbury, NH): Nose: Gorgeous blackberry, black cherry and tobacco with notes of game and forest floor. Then layers of smoke, truffle, floral and cigar box. A very classic Cordier nose with great black fruit and all of the funk that I love about 80's GL and Talbot. Palate: Enters with roasted blackberry / black cherry and earth notes, then the smoke, game and tobacco just pop. Finish: Complex fruit, smoke and game notes with just a bit of sweet oak and spice.
This showed beautifully with our Yak Sirloin roast, and showed the "other face" of bordeaux vs the PLL.
