Wednesday, August 11, 2021 - A very fine champagne for sure this Salon 1996. Had as an aperitif and it felt still painfully young like a coiled spring. Very high acidity, extremely racy. While certainly no disappointing (unlike quite a few Salons I had in the past) it to me doesn't live up to the price tag as to my palate I actually prefer the DP 96 standard release for example. It would however be tremendous fun to try this Salon again in around 10-20 years and see where it has gone. 95 with upside.
