Thursday, August 29, 2019 - Drank along a dinner at Mugariz. Needs a few moments in the glass to open up, but then bursting with delicate yet ultra-precise aromas of rubarb, lemon zest, a bit of smoke and a whiff of petrol. Over time more bee wax and honey. A citric and saline palate with sharp acidity and a long mineral finish. This has the potential for greatness no doubt, but did feel a bit pre-mature to drink now!
