Saturday, December 30, 2023 - Double Blind tasting
Light gold color
Medium plus aromas of ripe apple with slight reductive notes - dominated by dry rock/ saline character
Medium bodied with crisp palate of unique tart/ sweet apple flavors which almost bounce back and forth - also noted of lemon and apple skin - again ending with fairly intense salinity - acid/ fruit core
Medium plus acidity and medium alcohol with minimal phenolic bitterness
Moderate length led by acidity and minerality
I went with Chablis and was quite confident in my call - I think that says a lot about this wine
I think this wine is drinking great now and I don't feel that any improvement will be made in the cellar
