Sunday, May 22, 2011 - Classic aged CS - we enjoyed the first glass with a sirloin. Decanted and needed to wait longer that we did. Nice licorice nose w/ some hint of alcohol. Mature but bottled up as the 2nd glass an hour later revealed the complexity that age had brought to the "hot" mouth feel and finish.
