Wednesday, May 20, 2020 - I wasn't sure what to expect, but this was terrific: a mix of funky and smooth aromas (white tea, grape must, cedar, mild blue cheese) and focused flavors (lemon curd and honeydew). Lots of acidity, bracing and clean. Not particularly floral at first, more of a direct fruity/funky profile. Secondary notes of brine and salinity, which smell lovely. Bitter flavors (kale) bring out more aromatics but mask the depth of flavor. Lightly sweet vegetables (cucumber) bring out the potent acidity and citrus flavors and a different set of aromas. No malolactic traces.... Outstanding.
