Saturday, September 25, 2021 - Gaisböhl (Clairmount): Part of a vertical spanning 2003-2017. 13% abv, AP 36. NOSE: A drier level of preservation compared to 2017 and 2015. Decomposition has crystalized to fossil. Clean plumes of dry, blanched stone. Salty. Citron and maraschino cherry. Buttery, herbed pastry crust. MOUTH: silk. Diffuse, still gathering its adult expression. Quietly self-exiled in its room. Orchard flowers. Trifle. This is more about gentle, breezy texture than it is about any specific grocery list of challenging fruits and pantry flavors. 90+
