Saturday, January 7, 2023 - Decanted 60-90 minutes. Needed the time to open up. Precise nose of tart yet sweet cherry jelly. Liquorice and balsamic undertones. There’s a slight dusty tannic and dried herb finish. A bit acidic/sour but meant for food - confit duck wings and steak frites. This is a voice-cracking, awkward teenager with a learner’s permit. Needs time to build confidence and depth of character. 3-5 years and thus will be a star.
