Wednesday, January 10, 2024 - Day 1 : one hour slow ox … high acid crunchy and high tannins pretty much ignored by the table so I vacuum it and leave on bench. Day two fully open and amazing, textured, rich and fairly exuberant. Lesson… no sure, guess 3 hour decant min or another 5 years.
