  BDM은 꽤나 자주, 많이 마셔봤음에도 마실때 마다 좋은 와인 중 하나이다.
  아마 내가 와인을 좋아하는 이유가 "시큼달콤한 포도로 만든 술"이라고 생각하는 것과 일맥상통할 것이다.
  적당한 산도와 적당한 달콤함으로 늘 어떤 음식과 먹어도 무난하게 맛있는 술이다.
  
  노즈에서는 잘 숙성된 와인답게 검은 과실향이 느껴진다.
  이어서 약간의 감초향이 나면서 한약 비스무리하기도 하다.
  아주 약간 가죽향이 느껴지긴 하는데 강한편은 아니다.
  
  팔렛에서는 역시나 기분좋은 산도가 BDM답다.
  이어서 약간 좀 지나칠 정도로 당도가 있긴 한데 이게 역하진 않다.
  탄닌이 꽤나 부드럽게 풀려서 마시기도 무난하다.

  Day 1 : one hour slow ox … high acid crunchy and high tannins pretty much ignored by the table so I vacuum it and leave on bench. Day two fully open and amazing, textured, rich and fairly exuberant. Lesson… no sure, guess 3 hour decant min or another 5 years.

  15pct ABV which is higher than I’d like. Some gooseberry notes that overpowered the fruit. Good balance.
