Monday, January 6, 2020 - From 75cl. Ramonet’s 2005s have taken their time to get going with even the Ruchottes still in need of more time. Hence i was expecting this to be on the backward side. I wasn’t disappointed. Decanted and then served 2-24 hours later.

On opening, a light green/ gold colour. The nose was pretty mute and the palate every tight but immense.

After two hours, citrus, white flowers, mint and chiffon cake on the nose. The palate opened up nicely but still maintained a tight core of stone and minerals. A huge mouthful.

A day later, this is singing. The acidity, minerality and litheness associated with younger Ramonets has receded to reveal a beautifully spherical core of yellow and white fruits, jasmine and honeysuckle. An extraordinary bottle and one for the ages.
