Saturday, September 16, 2023 - Slow oxed for 6 hours. This had an attractive nose with roses and raspberry liqueur. The palate is medium to light without a lot of fruit weight. The acidity is pretty bright here, and the tannins are prominent and somewhat drying still. There's a distinctive note of gentian/bitters emerges on the finish. Maybe this would have fleshed out with a decent, but on this night the structure dominated.
