Monday, April 6, 2020 - Really nice and refreshing Champagne -- lemon juice, lemon curd, general citrus, green apple and a hint of brine that gave it some subtle savoriness to balance everything out. Not much by way of yeast character, much more fruit driven.

Not going to redefine champagne, but a nice focused example of what it is.
