Saturday, December 23, 2023 - Second bottle this evening. Still pale gold. Nose of sea air, oyster shell, flint, apple core, white stone. Layers of piercing granny apple, steel, grapefruit, and sea bed on the incisive palate. Austere structure and bracing acidity. Long finish of citrus, apple, white rock, and superb salinity. Promise fulfilled.
