Second bottle this evening. Still pale gold. Nose of sea air, oyster shell, flint, apple core, white stone. Layers of piercing granny apple, steel, grapefruit, and sea bed on the incisive palate. Austere structure and bracing acidity. Long finish of citrus, apple, white rock, and superb salinity. Promise fulfilled.

A pale yellow. Grapefruit inspired, along with bitterness and acidity. Some would say marked acidity, some would say marked bitterness. Definitely more grapefruity and bitter than mineral and stony.
Not as big and round as a southern Burgundy but quite wide for this far up north. Understandably, the overall impression at this advanced age is that of gentleness and lightness. Some magic happens at the finish when freshness sparkles with fructose. However, I’m not detecting much complexity, lift nor excitement.
This is supposed to be a top Chablis at an ideal age but I will limit my complaint to two words: 90 points.

Mid to full straw. Saline, mineral nose still with a whiff of iodine. Some mid palate weight here effecting vineyard and vintage, but really nothing out of place or to suggest any richness. Classical Chablis. Mineral, saline grip with stature. Very complete. Nicely long. Lovely. ***1/2

I prefer my Chablis as well on the early maturity side. Missing the freshness and saltiness. This bottle was oxidated according to its age, still benefitted from aeration. Still enjoyable. Drink up.

Notes on Wines from December 2021 (Wellington, NZ): Served double blind in a pair with the 2009 Bougros by Rauno. Deeper gold. A lactic, lemon curd bouquet with touches of cheddar, butterscotch and preserved citrus fruit. There was a debate about whether this Les Clos was premoxed or just appropriately oxidised, at age 16. I was more in the latter camp seeing some nice preserved and dried fruit flavours, well framed by bright acidity in the Les Clos. However, quite an evolved Chablis probably past its peak. Either way, I’d be drinking up soon.

Surprisingly closed at first for a 2005 but after two hours blossomed. Med plus acidity med nose and long finish. Med plus body. Have rest of my 12 owc left will give it some open time before consuming. Don’t see any more aging potential but I also don’t see this fading anytime soon. One to drink now.

A very fine wine, with depth and complexity. My bottle, however, showed just a touch of farmyard, which is quite acceptable but it tended to flatted out the flavours. I think I prefer my Chablis just on the under-ripe side of maturity. But this is only my personal preference.
I note that people often give advice on how long a wine can still be kept. Often this advice sounds objective, but it all really depends on where and how the wines have been kept and the climate that the drinker lives in. If I had any further bottles of this particular wine, I would drink them sooner rather than later.

Another perfectly matured bottle of this wine with a colour of pale green-gold with a nose of fresh lemons, green apple, white nectarine, boiled sweets and oyster shell. The palate has similar characters with excellent grip and length balancing the tart fruit characters. There is real Chablis oyster shell minerality on the finish that really lifts the character of this wine. After 15 years it really is all about the quality of the closure.

Tasted blind. I was getting mostly butter and cream at first and the nose was muted. It opened up with more air and exposed apple and lemon notes. On the palate, the acidity is good, but there's too much more of the butter/butterscotch flavor. Medium finish. I was shocked this was a Chablis from a producer I usually like.

A 'Lost Cellar' 2011 Flood bottle that is in perfect shape despite the history. The colour is a pale green-gold with a nose of fresh lemons, boiled sweets and oyster shell. The palate has similar characters with pretty good grip and tension but it never quite steps up to the next level. There is plenty to enjoy with food but it is a 'Wednesday wine' !

This bottle was in an strange phase. Lovely scents of lemon and honey upon opening but faded or tightened up after 2 hour decant and gave very little away at dinner. Was much improved after a night in the fridge but still did not match up to expectation. Either over the hill or not fully developed yet, hard to make the call. Will sit on remaining bottle at least 5 years to see what happens.

On the verge of old age where it’s not yet oxidized or nutty, but it’s lost any racy acid it may have once had. Soft, full bodied, maybe a little flabby. There’s lemon curd, honey, buttermilk, and, strangely (but interestingly and nicely), toasted coconut. You also get flint throughout and on the finish. Not a typical Chablis, at all. It was clearly ripe, but not excessively fruity. I would have guessed this to be a Cote du Beaune. Very easy to drink.

9 nov: Tapped for a Coravin sample, no aeration. Closed nose not giving away too much. Slightly bitter and maybe over the top. Not bad but I had expected a lot more of this one. Will revisit with proper treatment before scoring. 15 dec: Opened a month later and this just needed decant to develop. Initially old apples and a bit of oxidation. This seemed to blow away with 2h aeration revealing a lovely lean Burgundian wine. Fantastic development during that time.

This was the last of the case and, as in my other notes on this wine I remained mildly disappointed to the end. It's a lovely wine, but not the powerhouse one would imagine from this grower, vineyard and year. Light gold in colour this sample of Les Clos has an open nose of white flowers and soft orchard fruits coming through. On the palate it is a wine of medium weight with pure flavours and good precision. It is unquestionably classy, but just lacks that 'wow' factor. Everything is in harmony, but it just doesn't excite. Elegant with a long finish, but never managed to press my button. This sample was also coming to the end of its drinking window so if typical then it needs drinking up soon. Bright pale yellow. Chalky, dusty lemon and grapefruit. There are more exotic tropical fruits lurking underneath which were revealed after eating fresh oysters. The acidity has flattened a bit, but age has definitely made this better. No hints of oxidation. Can age 5+ more years.

A sound bottle with no immediate signs of oxidation. Full, rich nose of crisp green apple and minerals. The palate is fairly dense and ripe for Chablis. A little flat and missing some acids. Also didn't hold together with air. But was pretty good early on.

Light golden, fresh, and gloriously youthful. Barely showing any secondary development and not a hint of oxidation. This particular bottle could have (and probably should have) aged for years. Seems like I got lucky considering the incidence of premox in this wine.

Friend who served this had bought a case -- 5 of 8 bottles opened totally oxidized. Happily this 9th bottle was not oxidized. Overflowing with granny apple and chalky mineral. This was pleasant, but finish was short -- not up to the level of what Les Clos can offer.

3 hours in glass and this still wasn't enough time to fully allow the wine to emerge. The finish and balance are truly outstanding even though this wine is probably 5 plus years away from its prime. If you open soon give this wine either a couple hour decant or pop cork out and let sit for 8 hours.

Looking gorgeous at twelve years old. The nose has brilliant oyster shells, lime and lemon zest, vanilla, star fruit, nugget. The body is medium in stature with bright but settled acid and a nice lushness in the back end. There's nice honey flavor and texture, but it isn't sweet. The texture of this wine is incredibly pleasant, it's the highlight of the wine for me. There is also sea brine, parsley, and green onion. This still has good acid and life ahead of it, but doesn't seem to need anymore time to reveal its full self.

First of half case and this did not disappoint. Not a big crowd pleaser but every sip had something to say, quietly but precisely. Like small Crystals dancing in between the teeth, this was incredibly alive, thanks to its discreet and yet unmistakable origin that it couldn't hide. It was a Chablis and proud to be from les Clos. Super mineral, super dense, and super precise in its flavors or green apple, green lemony/grapefruity, iodine, and it went exquisitely with shell fish appretizer. Held superbly together with a wonderful backbone acidity which made the silky texture so refreshing, which for me was just a wonderful welcome. Cheers,

Nez décevant qui parait un peu fatigué, mielleux, avec des notes de pomme. La bouche montre de belles qualités de concentration et d'équilibre, mais jamais à la hauteur des bouteilles précédentes, laissant encore cette impression de méforme. Grande attentes et grande déception.

Pale yellow in color. An expressive nose combines citrus oils, crushed yellow summer pit orchard fruits, wet stones and white flowers. The palate veers towards the ripe spectrum with sweet white peaches, creamy lemon curd, good acidity and a super long finish filled with minerals and cut flowers. We had the 2005 side by side with 2006, and the 2006 was more classic with a touch more Chablis verve/acidity and the 2005 showing a more ripe/exotic character. Wow!!

Absolutely beautiful bottle - sang right from the moment the cork was popped. Paired with miso black cod. Buttery notes, oak very well integrated, precision and balance. I can see some may say this is a bit fat (for those who like classic chablis), for me it was an absolute top Chablis that must have hit its perfect drinking window.

5th bottle from the case and finally this wine has matched my prior expectation of it. The hint of caramel in the bouquet was beguiling. No hint of premox which had spoilt 2 of the previous 4 bottles. Here's hoping the remainder match this standard, as this tasting suggests the wine could develop its character further over the next 12 months.

Watergrill: Lower aromatics with hints of ripe apple, melon, Meyer lemon. But the wine comes to life in the mouth--after a moderately rich and full entry with a soft and round mouthfeel there is very good concentration of fruit and chalky clean minerals which swells up in the back end for a long finish and vibrant kick. Stays with you.

To me this seemed like such a baby, having tried some 1995 Chablis recently with buttery, almond, nutty notes, this had none of those. Almost green in colour. I was worried it would be too fat, flabby, and hot given the vintage, but it was cool, clean, very balanced. No chardonnay tang on the finish, just excellent minerality, and an acidity that you had to go looking for a little. Will need some time to develop more complexity, but I was very impressed by the purity.
Drank it from both the Oaked Chardonnay and White Wine Glass, preferred the White Wine as more fruit/sweetness.

Team Pete Dinner (Cove99, Peck Seah Street, Singapore): After a few premoxed Fevre bottles, this was thankfully completely clean. It was really tight when first popped, all acid and lemon zest. Even though it opened up quite nicely with time, I must say it always felt just a bit too young. Still, this was very good indeed. With some air, the nose showed slightly ripe aromas of peach and pineapple lined with classic saline notes of chalk, seashell and stony mineral. Nice. The palate was pure Chablis. It was wonderfully saline and stony, with lots of sinewy minerality running through deep, powerful, yet always taut and tightly focused flavours of white fruit sprinkled with lemon zest. Pure Les Clos class I wrote. Great finish too, wonderfully integrated and effortlessly powerful, it filled the backpalate with a mouthful of lovely chalky minerality. Great stuff. Beautiful even now, but it still clearly has its best years way ahead of it. Premox risk aside, I woud keep this for another 8-10 years easily. 93+

This is quite rich with round and mouth filling flavors of citrus poached white peaches with medium+ acidity and a long mineral and saline finish. When Fevre is on, it is on!

Wow - our bottle was ANGRY that we opened it at this point! Nose very reduced and palate a mess of sulfur and match-head aromas. For over an hour the wine was completely discombobulated. Then, over time, you got to see glimpses of appealing, Grand Cru-scale Chablis character well-framed by wood. But drinking this right now is like waking up your SO from a deep sleep for sex -- sure, they *might* do it, and after a while even get into the spirit of the thing, but you know you're not getting anywhere near maximal payoff from the experience.

Amazing how I enjoy GC chablis that's aged. Brings out amazing vanilla and the minerality fades somewhat. Excellent balance. Still bright and nice acidity. Caramel developing through time.

Chablis Les Clos night + an addictive and most impressive Scheurebe BA: Medium yellow. In the nose, this is very, very fine, quite expressive, creamy, a bit herbal (tarragon, mostly), there are grassy notes, too, the some pear and quince. It's shimmering and sort of light and airy. On the palate, the greatness continues, this is elegant, fine, well balanced, very precise and clear, herbal again. Long finish with tonic notes. Great stuff, but still quite young.

Medium yellow. The ripe citrus aromatics do not prepare you for a wine that is about 80% salinity and stone. Full, rich feel supported by excellent acidity. This has the power and breadth of Les Clos if not the precision of the finest examples. I have tended to avoid Fevre after bad experiences with oxidation in the early 2000 vintages, but I must say that they can be very good. This bottle was perfectly fresh with no advanced scents or flavors.

Opened for 15 minutes, 13C: Started quite reticent, very young. No oxidation issues here, I would have guessed this was a 2010 1er cru or top village it was so young. Some mineral/stony character but lacking true Grand Cru character. Very lemony and floral. Great length. Went well with haddock & leek fish cake, but a 2010 village would have done as well. With half an hour of and closer to 14-15C, on it's own, and this gets much more complex. Saline, iodine, quite mineral now, floral, herby, smoky, even a hint of gunflint, great acidity but it's settled. Very mouthwatering. Very good but still seems too young. Complex, long. Some slight envelope glue character I get in Chablis. Lovely finish of lemon with a hint of herb and the merest hint of oak and smoke. With whole sea bream baked with lemon, garlic, parsley and rosemary: this was very, very primary and young: lots of lemon. Great depth and balanced acidity, long finish but so young! Afterwards and it gets more complex again. I'm now picking up the herby notes in the sea bream. Floral and herby. With camembert: young again. I think this needs more time but this is what Chablis is all about. What a wonderful wine! So complex. With a caramel-mature cheddar: primary again. Afterwards, and with some grapes, it became grapey, tannic, astringent but all in a good way. And very, very intense. I think I now understand what Grand Cru is all about - it's weight, intensity and slow ageing. Later it's green, floral, perfumy, a touch of green, herby, some fennel. This has to be one of the most complex, intriguing white wines I've ever had. And yet it feels like it has so much more to give..

Devin's Surprise Birthday Party (Q4 - Vancouver, BC): This was quite tight and clean on the nose at first showing plenty of white flowers, sea spray, stone fruits, crushed slate, tart crisp lemon, light caramel, and some soapy waxy notes. This has a firm fresh tart lemon core on the palate accented with minerals, crushed stones, plenty of saline, crisp oak spice, lime zest, and ripe green apples. Great acidity on the finish. This came together quite well with tons of citrus, saline, and minerals followed by some ripe tropical fruits hiding behind as this emerged from its shell. Based on this bottle this would benefit from a couple more years in the cellar. I wish it wasn't such a gamble with white Burgs. Very good+

Drank at Home My God was this good. An incredible complexity with both lush fruit and butter with a crisp minerality. We all just sat there amazed at how good this was. Excellent stuff and better than my previous bottle, I am looking forward to more.

Yumm. Steely, rich, mineral, waxy, years yet for prime drinking. Shows the weight of the vintage without losing the mineral balance. Needs air and time to unveil the nuances hidden by big fruit. Not a delicate flower, but a melange of tropical and white fruits with some salinity and finishing mineral wash.

This is the third bottle that I've tried and I remain mildly disappointed; it's a lovely wine, but if I am brutally honest some of Fevre's 2007 1er crus are out-maneuvering this. Light gold in colour this sample of Les Clos has an open nose of white flowers and soft orchard fruits coming through. On the palate it is a wine of medium weight with pure flavours and good precision. It is unquestionably classy, but just lacks that 'wow' factor. Everything is in harmony, but it just doesn't excite. What's more, it seems to me to be well in its drinking window so I can't see where that much desired additional touch of excitement is going to come from. Consistent bottles. Estimated maturity: 2012-2015+

Light gold in colour this sample of Les Clos is still quite reserved on the nose with just a hint of white flowers coming through. It was aerated in a decanter for 20 minutes before pouring, but it never really seemed to get going even once it was in the glass. On the palate it is a wine of medium weight with pure flavours and good precision. It is unquestionably classy, but just lacks that 'wow' factor. Everything is in sublime harmony, but it just doesn't excite at the moment. Bit like driving a Bentley, when what you really wanted to experience was a Ferrari. Had two bottles and both were identical. Estimated maturity: 2012-2015+

My gosh, did this improve with some air time! White flowers, minerals and lemon cream. The palate weight and intensity just skyrocketed into an intense, tongue-gripping experience-all with a huge, long finish. Some saline tones. If not for pre-mox fears, would have held this at least 5-7 more years.

Medium yellow. Scintillating aromatics of citrus, cut apple and some brothiness. Rich on the front end with some vanilla cream in addition to the lemon fruit, then excellent acidity, salinity and soil. This is perhaps bigger and a little less detailed than the greatest wines from Les Clos, but by the same token, it may be one of the best 2005 Chablis I've had. I love the way it takes advantage of the vintage's ripeness without sacrificing Chablis bite and structure. Outstanding wine.

Music and Wine at Rasoul's Part 2 (Vancouver, BC): Popped and poured. Wow, Puligny mixed with Chablis. White flower, citrus, some orchard fruit with traces of salinity and chalk. Tight on the palate at first but after an hour it opened up, filled out, and became more Chablis-like with fresh, energetic acidity and lively flavours of lemon and lime, minerality and a chalky mineral infused finish. A great balance of energy and weight with a beautiful mineral cut. Drinks well now but 2-3 years more in the cellar would be ideal. Excellent. 92+

Popped and poured, served quite chilled. Pale gold. Nose of applecore, lemon-lime, flint, sea air. Closed palate for about 30 minutes, then a gradual unveiling of all the right parts: stones, tart grapefruit, and granny apple flavors with plenty of minerals and acidity. Still on the upswing on the last sip. Echoes of oyster shell, citrus, and flint on the long finish. Has a ways to go but is definitely aging well.

Siggy Turns Forty!!!: Deep yellow color (but not premox/gold). Beautiful and expressive nose showing clean, fresh fruit with some mineral. Delivers lots of flavor on the palate and has an intriguing salinity. More dense and weighty than I would have expected, but with the structure to carry it off. Great length on the finish. Drinking pretty well now, but this really needs a good, long cellaring (if not for the risk of premix).

Hhmmm. Tasted of fairly generic chard. Would be hard-pressed to identify this as Chablis in a blind tasting. None of the tension and/or minerality that one would expect. This bottle had as good a provenance as any. 2005 is not a Chablis year in my book (better go for 2004 or 2007/08) but this should still have performed better. Bad bottle?

Gorgeous, classic, regal Chablis. Complex, layered, energetic, a touch reserved, yet oh-so-intense. Multifaceted yellow fruit and racy minerality, with a salty/saline/seawater mouthfeel and gorgeously balanced acids. Lovely, long finish. Improved after 48 hours in the fridge under Vacu-Vin. Ideally this shouldn't be touched for at least 5 years, but since premox is so random and cruel, it probably makes sense to start dipping into the stash now.

This is "Geology 101" in a glass! Gorgeous and extremely pure aromas of quarry dust, quartz and iris, with bits of matchstick on the second night. This wine was a perfect and beautiful light gold in color with greenish tones. Brilliant, fullish-bodied palate that is showing the slight richness of the 2005s that I love, while still giving the back of your tongue a nice acidic workout, while all in perfect balance. Green apple, gobs of minerals, grapefruit and iodine. This is just a beautiful wine that was just a hair less showy as I finished it up the second night, but still lovely. My guess is this is just starting to hit it's prime drinking window.

Lovely nose with ripe fruits, borderline exotic, citrus and a nice chalkiness. Hint of coconut because of the oak. Almost full body, compared to the nose the palate lacks definition and focus. Maybe in an akward phase right now. I expect more complexity, acidity and longer finish for Les Clos and I don't find it here.

Quite restrained on the nose, emitting the faintest whiff of Arum Lily and oyster shell. In the mouth it is dense, rich and sappy with tremendous line and great vivacity. A torrent of liquid geological matter laps around the gums and it has terrific focus and clarity.

I expected more. The bouquet is quite neutral. The taste as well. There is a firm dose of acidity and pleasant bitterness in the finish. Don't misunderstand, this is a very good wine, but this bottle is not living up to the expectations. Probably needs more time.

Chablis Grand Cru chez Daniel Boulud (at the restaurant): Fine, soft, long finish; fine tuned, grassy, citrusy, wet chalk, and very elegant. Perhaps not as much complexity as the other les clos by Christian Moreau, tasted side by side: but it had quite a body and stood up to a foies gras stuffed rabbit saddle more than well. Impressive.

Brooklynguy opened the 05 and 06 Fevre Les Clos side-by-side. Interesting comparison between the two. The '05 was like quartz: clear, chiseled, multifaceted and hard as rock. The '06 is more effusive now, more forward, showing more nuance and detail. This is in-line with my experience from both vintages: '06 is giving and precocious, drinking well now; '05 is lean and, to my palate, in need of some time. Both these wines are great, but the '06 is more friendly and more giving now. The 05 may be better in 10 years.

Light straw color and a nose of minerality and light citrus components with a wandering nuance of stone fruit. At first taste there was an interesting and underlying sweet note...that was unexpected...and did vanish with time. Maybe it was me...but we eventually found a firm fruit texture with an almost bracing edge that was very approachable and went great with our starters and mid course choices. Crisp with a nice dryness on the finish...

The bottle was in great shape; pale gold color. The aromatics were simply breath-taking, offering up scents of mineral-laden white fruits, loamy earth, and spice. Medium-bodied, fine structure, and a complex finish. Remarkably better than the bottle that we had over Thanksgiving.

Popped and poured. The color of straw. Very impressive loamy/chalky aromas, with loads of mineral and white fruit. Good concentration, but very structured, with loads of crisp acidity on the finish. I think this would benefit from additional cellaring (or some serious/extended airing) as it held up very well in the open bottle; it was much more "charming" on day 2.

Your Happy Wine (Mark): Tasted double blind. Straw yellow in color. Restrained tropical fruit nose that became more expressive as it warmed in the glass. Tastes of pear, apple, cat pee and mushroom. Nicely balanced with very good mid palate depth and complexity. Well integrated oak. My guess was white Burgundy from the Les Clos vineyard in Chablis but I originally thought it was from 2001 thinking it was older due how well the oak was integrated. A fantastic wine. Brought by Jeff. 13% alcohol.

I can see what the fuss is about: a superb chablis. The wine presents with a very pale gold color and a nose of minerals, steel, tightly-wound citrus (lime), tissane. Endless finish with tremendous power and unreal balance between acidity, concentrated fruit. A slightly creamy impression gives the wine a hint of the exotic. Awesome!

A pale yellow. Grapefruit inspired, along with bitterness and acidity. Some would say marked acidity, some would say marked bitterness. Definitely more grapefruity and bitter than mineral and stony.
Not as big and round as a southern Burgundy but quite wide for this far up north. Understandably, the overall impression at this advanced age is that of gentleness and lightness. Some magic happens at the finish when freshness sparkles with fructose. However, I’m not detecting much complexity, lift nor excitement.
This is supposed to be a top Chablis at an ideal age but I will limit my complaint to two words: 90 points.

Notes on Wines from December 2021 (Wellington, NZ): Served double blind in a pair with the 2009 Bougros by Rauno. Deeper gold. A lactic, lemon curd bouquet with touches of cheddar, butterscotch and preserved citrus fruit. There was a debate about whether this Les Clos was premoxed or just appropriately oxidised, at age 16. I was more in the latter camp seeing some nice preserved and dried fruit flavours, well framed by bright acidity in the Les Clos. However, quite an evolved Chablis probably past its peak. Either way, I’d be drinking up soon.

Surprisingly closed at first for a 2005 but after two hours blossomed. Med plus acidity med nose and long finish. Med plus body. Have rest of my 12 owc left will give it some open time before consuming. Don’t see any more aging potential but I also don’t see this fading anytime soon. One to drink now.

A very fine wine, with depth and complexity. My bottle, however, showed just a touch of farmyard, which is quite acceptable but it tended to flatted out the flavours. I think I prefer my Chablis just on the under-ripe side of maturity. But this is only my personal preference.
I note that people often give advice on how long a wine can still be kept. Often this advice sounds objective, but it all really depends on where and how the wines have been kept and the climate that the drinker lives in. If I had any further bottles of this particular wine, I would drink them sooner rather than later.

Another perfectly matured bottle of this wine with a colour of pale green-gold with a nose of fresh lemons, green apple, white nectarine, boiled sweets and oyster shell. The palate has similar characters with excellent grip and length balancing the tart fruit characters. There is real Chablis oyster shell minerality on the finish that really lifts the character of this wine. After 15 years it really is all about the quality of the closure.

Tasted blind. I was getting mostly butter and cream at first and the nose was muted. It opened up with more air and exposed apple and lemon notes. On the palate, the acidity is good, but there's too much more of the butter/butterscotch flavor. Medium finish. I was shocked this was a Chablis from a producer I usually like.

A 'Lost Cellar' 2011 Flood bottle that is in perfect shape despite the history. The colour is a pale green-gold with a nose of fresh lemons, boiled sweets and oyster shell. The palate has similar characters with pretty good grip and tension but it never quite steps up to the next level. There is plenty to enjoy with food but it is a 'Wednesday wine' !

This bottle was in an strange phase. Lovely scents of lemon and honey upon opening but faded or tightened up after 2 hour decant and gave very little away at dinner. Was much improved after a night in the fridge but still did not match up to expectation. Either over the hill or not fully developed yet, hard to make the call. Will sit on remaining bottle at least 5 years to see what happens.

On the verge of old age where it’s not yet oxidized or nutty, but it’s lost any racy acid it may have once had. Soft, full bodied, maybe a little flabby. There’s lemon curd, honey, buttermilk, and, strangely (but interestingly and nicely), toasted coconut. You also get flint throughout and on the finish. Not a typical Chablis, at all. It was clearly ripe, but not excessively fruity. I would have guessed this to be a Cote du Beaune. Very easy to drink.

9 nov: Tapped for a Coravin sample, no aeration. Closed nose not giving away too much. Slightly bitter and maybe over the top. Not bad but I had expected a lot more of this one. Will revisit with proper treatment before scoring.
15 dec: Opened a month later and this just needed decant to develop. Initially old apples and a bit of oxidation. This seemed to blow away with 2h aeration revealing a lovely lean Burgundian wine. Fantastic development during that time.

Light golden, fresh, and gloriously youthful. Barely showing any secondary development and not a hint of oxidation. This particular bottle could have (and probably should have) aged for years. Seems like I got lucky considering the incidence of premox in this wine.

Looking gorgeous at twelve years old. The nose has brilliant oyster shells, lime and lemon zest, vanilla, star fruit, nugget. The body is medium in stature with bright but settled acid and a nice lushness in the back end. There's nice honey flavor and texture, but it isn't sweet. The texture of this wine is incredibly pleasant, it's the highlight of the wine for me. There is also sea brine, parsley, and green onion. This still has good acid and life ahead of it, but doesn't seem to need anymore time to reveal its full self.

Rich yellow, a youthful glow.
Plump ripe peaches, tropical fruits, faint hint of oyster shell.
Rich, fleshy, solid weight, broad open flavours. Good acidity though, has a nice crisp finish. Zesty citrus along with with the ripe plump melon and peach fruit flavours. Mature Chablis, opened up and ready to drink.

Pale yellow in color. An expressive nose combines citrus oils, crushed yellow summer pit orchard fruits, wet stones and white flowers. The palate veers towards the ripe spectrum with sweet white peaches, creamy lemon curd, good acidity and a super long finish filled with minerals and cut flowers. We had the 2005 side by side with 2006, and the 2006 was more classic with a touch more Chablis verve/acidity and the 2005 showing a more ripe/exotic character. Wow!!

I continue to remain mildly disappointed; it's a lovely wine, but not the powerhouse one would imagine from this grower, vineyard and year. Light gold in colour this sample of Les Clos has an open nose of white flowers and soft orchard fruits coming through. On the palate it is a wine of medium weight with pure flavours and good precision. It is unquestionably classy, but just lacks that 'wow' factor. Everything is in harmony, but it just doesn't excite. Wonderfully elegant with a long lingering finish, but a little 'lightweight'. Consistent bottles. Estimated maturity: 2012-2020

Absolutely beautiful bottle - sang right from the moment the cork was popped. Paired with miso black cod. Buttery notes, oak very well integrated, precision and balance. I can see some may say this is a bit fat (for those who like classic chablis), for me it was an absolute top Chablis that must have hit its perfect drinking window.

To me this seemed like such a baby, having tried some 1995 Chablis recently with buttery, almond, nutty notes, this had none of those. Almost green in colour. I was worried it would be too fat, flabby, and hot given the vintage, but it was cool, clean, very balanced. No chardonnay tang on the finish, just excellent minerality, and an acidity that you had to go looking for a little. Will need some time to develop more complexity, but I was very impressed by the purity.
Drank it from both the Oaked Chardonnay and White Wine Glass, preferred the White Wine as more fruit/sweetness.

Team Pete Dinner (Cove99, Peck Seah Street, Singapore): After a few premoxed Fevre bottles, this was thankfully completely clean. It was really tight when first popped, all acid and lemon zest. Even though it opened up quite nicely with time, I must say it always felt just a bit too young. Still, this was very good indeed. With some air, the nose showed slightly ripe aromas of peach and pineapple lined with classic saline notes of chalk, seashell and stony mineral. Nice. The palate was pure Chablis. It was wonderfully saline and stony, with lots of sinewy minerality running through deep, powerful, yet always taut and tightly focused flavours of white fruit sprinkled with lemon zest. Pure Les Clos class I wrote. Great finish too, wonderfully integrated and effortlessly powerful, it filled the backpalate with a mouthful of lovely chalky minerality. Great stuff. Beautiful even now, but it still clearly has its best years way ahead of it. Premox risk aside, I woud keep this for another 8-10 years easily. 93+

Pale yellow in color. Over about 30 mins in the glass lovely airy aromas of citrus oils, white flowers, flint and minerals emerge. This is quite rich with round and mouth filling flavors of citrus poached white peaches with medium+ acidity and a long mineral and saline finish. When Fevre is on, it is on!

Chablis Les Clos night + an addictive and most impressive Scheurebe BA: Medium yellow. In the nose, this is very, very fine, quite expressive, creamy, a bit herbal (tarragon, mostly), there are grassy notes, too, the some pear and quince. It's shimmering and sort of light and airy. On the palate, the greatness continues, this is elegant, fine, well balanced, very precise and clear, herbal again. Long finish with tonic notes. Great stuff, but still quite young.

Opened for 15 minutes, 13C: Started quite reticent, very young. No oxidation issues here, I would have guessed this was a 2010 1er cru or top village it was so young. Some mineral/stony character but lacking true Grand Cru character. Very lemony and floral. Great length. Went well with haddock & leek fish cake, but a 2010 village would have done as well.
With half an hour of and closer to 14-15C, on it's own, and this gets much more complex. Saline, iodine, quite mineral now, floral, herby, smoky, even a hint of gunflint, great acidity but it's settled. Very mouthwatering. Very good but still seems too young. Complex, long. Some slight envelope glue character I get in Chablis. Lovely finish of lemon with a hint of herb and the merest hint of oak and smoke.
With whole sea bream baked with lemon, garlic, parsley and rosemary: this was very, very primary and young: lots of lemon. Great depth and balanced acidity, long finish but so young!
Afterwards and it gets more complex again. I'm now picking up the herby notes in the sea bream. Floral and herby.
With camembert: young again.
I think this needs more time but this is what Chablis is all about. What a wonderful wine! So complex.
With a caramel-mature cheddar: primary again. Afterwards, and with some grapes, it became grapey, tannic, astringent but all in a good way. And very, very intense. I think I now understand what Grand Cru is all about - it's weight, intensity and slow ageing.
Later it's green, floral, perfumy, a touch of green, herby, some fennel.
This has to be one of the most complex, intriguing white wines I've ever had. And yet it feels like it has so much more to give..

HK Children's Skin Foundation 2nd Annual Charity Dinner & Auction (Chez Patrick Restaurant, 2/F, Garden East, 222 Queen's Road East, Wan Chai, Hong Kong): No detailed notes because of the cameraderie, conversation and hectic bidding on our table......... the heavier end of Chablis but maintaining great definition. My God was this good. An incredible complexity with both lush fruit and butter with a crisp minerality. We all just sat there amazed at how good this was. Excellent stuff and better than my previous bottle, I am looking forward to more.

Yumm. Steely, rich, mineral, waxy, years yet for prime drinking. Shows the weight of the vintage without losing the mineral balance. Needs air and time to unveil the nuances hidden by big fruit. This is the third bottle that I've tried and I remain mildly disappointed; it's a lovely wine, but if I am brutally honest some of Fevre's 2007 1er crus are out-maneuvering this. Light gold in colour this sample of Les Clos has an open nose of white flowers and soft orchard fruits coming through. On the palate it is a wine of medium weight with pure flavours and good precision. It is unquestionably classy, but just lacks that 'wow' factor. Everything is in harmony, but it just doesn't excite. What's more, it seems to me to be well in its drinking window so I can't see where that much desired additional touch of excitement is going to come from. Consistent bottles. Estimated maturity: 2012-2015+

It was aerated in a decanter for 20 minutes before pouring, but it never really seemed to get going even once it was in the glass. My gosh, did this improve with some air time! White flowers, minerals and lemon cream. Tight on the palate at first but after an hour it opened up, filled out, and became more Chablis-like with fresh, energetic acidity and lively flavours of lemon and lime, minerality and a chalky mineral infused finish. A great balance of energy and weight with a beautiful mineral cut. Drinks well now but 2-3 years more in the cellar would be ideal. Excellent. 92+

Hhmmm. Tasted of fairly generic chard. Would be hard-pressed to identify this as Chablis in a blind tasting. None of the tension and/or minerality that one would expect. This bottle had as good a provenance as any. 2005 is not a Chablis year in my book (better go for 2004 or 2007/08) but this should still have performed better. Bad bottle?

Multifaceted yellow fruit and racy minerality, with a salty/saline/seawater mouthfeel and gorgeously balanced acids. Lovely, long finish. Improved after 48 hours in the fridge under Vacu-Vin. Ideally this shouldn't be touched for at least 5 years, but since premox is so random and cruel, it probably makes sense to start dipping into the stash now.

This is "Geology 101" in a glass! Gorgeous and extremely pure aromas of quarry dust, quartz and iris, with bits of matchstick on the second night. This wine was a perfect and beautiful light gold in color with greenish tones. Brilliant, fullish-bodied palate that is showing the slight richness of the 2005s that I love, while still giving the back of your tongue a nice acidic workout, while all in perfect balance. Green apple, gobs of minerals, grapefruit and iodine. This is just a beautiful wine that was just a hair less showy as I finished it up the second night, but still lovely. My guess is this is just starting to hit it's prime drinking window.

On opening i thought this was slightly oxidising but as it cooled down and breathed it became a good quality Chablis. Lots of acidity and good textures, slighly butter, whent well with our Lemon Chicken dinner. Needs another year I think to excel.

I can see what the fuss is about: a superb chablis. The wine presents with a very pale gold color and a nose of minerals, steel, tightly-wound citrus (lime), tissane. Endless finish with tremendous power and unreal balance between acidity, concentrated fruit. A slightly creamy impression gives the wine a hint of the exotic. Awesome!
