Thursday, August 10, 2023 - June 2019 disgorgement disgorgement. Served side-by-side with the Coeur de Cuvee (both done blind). 80/20 Pinot Noir/Chard. 7 gms of dosage. Initially I sensed a caramel quality in the aromatic, and then later the evolution of that quality, which was also in the palate, expressed as a salted butter quality, what I believe Counselor Seiber may have called browned butter. Good structure, some tension with a note of minerality. And, like I often find with GCdO, it takes the fruit to a more richer place. 2nd bottle of this since release, and been a while since I have opened one, and I thought this showed well.
