June 2019 disgorgement disgorgement. Served side-by-side with the Coeur de Cuvee (both done blind). 80/20 Pinot Noir/Chard. 7 gms of dosage. Initially I sensed a caramel quality in the aromatic, and then later the evolution of that quality, which was also in the palate, expressed as a salted butter quality, what I believe Counselor Seiber may have called browned butter. Good structure, some tension with a note of minerality. And, like I often find with GCdO, it takes the fruit to a more richer place. 2nd bottle of this since release, and been a while since I have opened one, and I thought this showed well.

disgorged June 2019, 80% Chardonnay and 20% Pinot noir. Richer and weightier than I expected at this youthful stage, but still full of fruit and lemon curd. Exactly what I’ve come to expect of Vilmart and delicious.
From 45+ year old vines. 80% Chardonnay, 20% PN, disgorged June 2019. Precise, focused, wonderful fruit, high acid in its youth but not in a distracting way. This is absolutely delicious right now, and will definitely get better.

(Disgorged in June 2019, 20% Pinot Noir and 80% Chardonnay) Youthful with marzipan, biscuits, baked bread, minerals and refreshing lemon citrus zest on the delicious nose. Pleasant acidity showing yellow apples on the youthful palate combined with biscuits and cream before a citrus zesty bitterness takes over on the lengthy finish. (Best 2020-2035)

Disgorged June 2019. As typical for GCdO, 80% Chard and 20% Pinot Noir, with 7 grams of dosage. We poured this blind next to the 2014 (also blind), which created a cool comparison. There is power in the 2015, the same contraction of the 2014 too, but the acidity and fruit in the 2015 seems more overt, youthful, still searching for some definition (which the 2014 already shows). Pineapple, orange, limey acidity. The 2014, at least for this moment, is superior to the 2015, so we'll have to see how age tames some of the youth.

Tons of orchard fruit on the nose with some hints of fresh-baked bread and chalk. Crisp on the palate with predominantly red apple and pear notes, with well-integrated acidity. This didn't have the depth or breadth of complexity as I typically find with the Coeur de Cuvée bottling from Vilmart, not sure if this is due to the vintage or typical of the cuveé in comparison to the CdC.

Nose: The nose is forward and balanced with red apples, quince, pears, stone fruits, vanilla, ginger, biscuits, baking spices, yellow flowers, and some doughy notes. There is good complexity, but it lacks some depth that I normally expect from this cuvee.
Taste: The feel is Medium bodied with crisp, high acidity. The acidity is well integrated already with a more forward take of red apples, quince, pears, stone fruits, vanilla, baking spices, yellow flowers, and dough notes.
Overall: This is disappointing. There is a more forward nature to the tones, but it lacks depth across the nose and palate. The acidity also lacks the cut that I normally expect as well. It could likely benefit from a few years of aging, though I don't see this as a long-term ager.
(Disgorged in November 2019, 20% Pinot Noir and 80% Chardonnay) Very pleasant nose showing french bakery and hazelnuts combined with a pleasant minerals and citrus acidity. With a nice and smooth palate showing yellow apples acidity and a lengthy finish showing citrus zest. Already showing very well, but should reward some extra time to integrate further. (Best 2025-2045)

This is a stunning Champagne: stone fruit, yellow apples, brioche, citrus, lemon cheesecake.
Succulent, elegant, ripe, fresh and just plain excellent.

Fantastic champagne! So bright, fruitful, delightful and exciting. Really well made. Vilmart is my favorite, and this cuvée has it all.
