Sunday, January 2, 2022 - Pop and pour. Wow, this has evolved in the last 1.5 years. Lovely nose of tarragon, soft sweet green pepper, a hint of lanolin, lemon..a lovely savory and sweet mix. On the palate: fantastic acidity, amazing density; sweet apple, tarragon, sweet pepper, loads of stony minerality, sea salt. Intensely flavored, and a nice long finish. Flat out stunning right now.
