Saturday, February 4, 2023 - Absolutely lovely with beef stew. I popped the cork the day before, and partially re-inserted, and left the bottle outside, roughly 50 degrees F, for 24 hours. Brought it inside and let it come up to about 60 F. That process worked quite well, to let it open up gradually. Black cherry and oak... enjoyed this wine immensely.
