Wednesday, January 11, 2023 - Decanted 90 minutes before service. In the glass, pale clear raspberry color at the rim, fading quickly to a dark, brooding, almost black core. On the nose, black cherry, orange peel, and flint. On the palate, cherries, spice, Cointreau, and a hint of ocean water, with structured tannins on a long finish. I don't recall previous iterations of Ceras having such a deep color, but the aromatics and taste profile remains consistent - an interesting and pleasurable wine. I think there may still be upside from here, with another 3-5 years time.
