Friday, February 10, 2023 - Pop and pour. It was great. A bright sting of acid on the tip of the tongue, pronounced fruit and spice on the palate while remaining impossibly light, and an overall lovely accompaniment for an array of Filipino dishes. It’s nowhere near as “natty” as people say. And most of the wine you drink is fermented with indigenous yeasts anyway so relax!
