Friday, October 8, 2021 - I love CT (Chartogne-Taillet in this case, but I also 💌 CellarTracker) and Mike knows it, so when I announced we would be having caviar for an appetizer, he was thoughtful enough to bring this along. The oyster shell and briny mineral notes of the Barres married nicely with the caviar. Lemon and stone fruits in a very dry, clean and focused (non-oxidative) style. Very nice, but definitely needs more time to really blossom.
