Sunday, January 7, 2024 - Decanted and let it breath for about an hour before dinner. On opening it had some funkiness that almost smelled corked and tasted sour cherries. I had some hope based on Burgundy Al’s note. The funk did blow off, it was still high toned after an hour, the sour cherry bitterness softened. It paired well with the steak and salmon. After two hours it started to unwind more and deliciousness factor went up and the wine disappeared quickly. It needs time to unwind but it didn’t have much tannins so I wouldn’t sit on these too much longer.
