Tuesday, December 5, 2023 - Having just been in Tuscany, I felt the need to prepare a traditional Tuscan dish of peposo and pair it with a Chianti. The Felsina fit the bill perfectly. A classic Chianti with cherry notes, dusty tannins, and a pleasant acidity. As I mentioned before Felsina is my everyday Chianti, always delicious, easily available, and reasonably priced.
