Monday, September 24, 2018 - Almost a yellow colour and lots of bubbles left, a pleasant smell of autumn forest (not decay), red apples and croissant. Taste is fresh and wide, still acidic but in a nuanced way, it is not overpowering, I think of more apples and croissant (not toast with butter) but also nuts and some tones of cloudberry! I like this and think it is definitely time to drink this now, I can't see this improving more. Had this with fried scallops with green herbs for starters and beef with mushroom, green beans and fried raw rice together with an almond vinaigrette as a main course. This wine was a perfect companion to both dishes.
