(From magnum, Disgorged in 2021, after 32 years on lees, 100% Pinot Noir from Ecueil, dosage 4 gr/L) Spiciness on the mature nose showing dried herbs, yellow plums and some nuts and opens up with a lovely hint of charcuterie and sherry. Intense on the palate focused on raisins, honey and yellow plums with a very lengthy finish.

Almost a yellow colour and lots of bubbles left, a pleasant smell of autumn forest (not decay), red apples and croissant. Taste is fresh and wide, still acidic but in a nuanced way, it is not overpowering, I think of more apples and croissant (not toast with butter) but also nuts and some tones of cloudberry! I like this and think it is definitely time to drink this now, I can't see this improving more. Had this with fried scallops with green herbs for starters and beef with mushroom, green beans and fried raw rice together with an almond vinaigrette as a main course. This wine was a perfect companion to both dishes.

Wonderful bottle, perfectly stored. Light dosage (to my personal liking) but plenty of ripe fruit and some bread. A very nice vintage to open on a casual wednesday.

Beautiful bubbles, tiny, slightly oblong. Mature color. This wine needs no decanting or opening in advance. What it needs is staying at the right temperature. When it does, it has such a generous nose filled with whipped cream, brioche, nuts and Jerez-notes in the background. It is a fragile wine and you need to pay attention. There is acid left but fruit has all matured. A wine for grown ups and nothing you’d pop and pour for laughs.
Deep taste of rye bread and apple. Smells a little pungent (think cauliflower) right at the uncorking. After a while the smell is more towards mushrooms and overripe apples.
Long aftertaste and still fresh. A very good amount of bubbles still.

Always fun to taste and try mature champagne. Baking syruo, honey, wax, raisins, canned mushrooms and corn as well as a quite oxidized sherry-like note. Lacks intensity in the mouth and feels at times a bit watery. This is past it. More fun than good.
Low amount of bubbles, creamy and delicate texture, not that much of autolytic characteristics. 10-15 min after opening some oxidized notes appeared. It is really fun to try old wine, but I would not buy this one again. Even though its "my" vintage

Golden yellow color with fine bubbles. Looks stunning and smells fantastic! Lots of mature flavors, cognac, red apples, toffee, almonds, and it keeps evolving during the night.
Day 2: Missing the bubbles (of course) otherwise still complex and joyful.
Drinking well at this stage (according to me).

Mature notes of dried fruits, lots of raisins and prunes. Hints of oxidation, but still very alive. There’s a distinct note of mushroom soup that tends to dominate both the nose and the palate, making it a bit one dimensional.

(Late disgorged in September 8th 2016, 100% Pinot Noir) Golden yellow colour with a lovely nose showing butter, honey and lime in a mature style that shows after some glass time. Dried fruits and dades on the still fresh and long palate. This late disgorged cuvée combines freshness and maturity in a lovely way and will hopefully stay this way for a couple of more years. Late disgorged bottles can be fragile and after trying this several times last six months I must say that this was the best bottle yet. This will probably hold on for a few more years.

Golden yellow colour with alot of fine tiny bubbles. On the nose a wide explosion starting with Sauternes and Cognac and transforming into into dark chocolate. The palate shows a soft, creamy and smooth taste of mature apples with a long nice after taste.
After a couple of hours it transformed into a new wonderful phase showing much more mature taste and nose with ox brooth. Just wonderful right now, if you have bottles left do try one now!
Perfect together with both the Foie Gras and the truffle risotto.

Immediately out of the freshly opened bottle, the toasty, yeasty aromas were overwhelming. After an hour, it was all sweet citrus and honey. Delicious.

Sure, a good champagne, but at the same time nothing special.

Better than the 1989; 1988 is just a great vintage.
Don't keep this for too long, it's already starting to show signs of going downhill.
