Tuesday, March 9, 2010 - Clear mahogany. Dried flowers, sweet cumin, dried apricot, bouquet an intense and appealing nose. Soft texture, well balanced medium body with well structured acidity. Mixed dried fruit with wood and flecks of minerality, finishes with a long stretch through a layered toasted caramel. Rounder and lower acid than a true dry Palomino Amontillado but similar oxidized traits and less yeast flavors.
