Thursday, August 5, 2021 - 6 years after saying, "drink this now," I find yet another bottle of the stuff in my wine cellar.
Although broken cork necessitated my passing it through a sieve (poor man's aerator), I did not really let it chambré or breathe. I just popped it, inhaled it and sipped.
Cork was very dry, wine had been untouched on one side for 16 years. Plenty of sediment.
Wow, still good, and very smooth at this point. Good old Wine Spectator says 03 produced richer wines than usual (for Aus Shiraz).
First nose gets me ripe plums and black cherries. As the glass mixes with the atmosphere, those plums are rotting just a bit.
Tasted very smooth, but tannins get more pronounced as I drink this first glass. Again, the ripe cherry and usual spice, but quite a chocolate kick on the end of the tasting, which is becoming more pronounced.
I'm about to have a steak with this, but a better pairing would be a fatty burger smothered in bleu cheese and mushrooms.
