Saturday, March 9, 2024 - Compelling example of Willamette Pinot Noir made using true Burgundian method and approach. A little focus is rewarded with a lot of finesse and refined complexity. Not as much of a quaffer as some of its contemporaries, but makes an admirable pairing to roast fowl (we went with quail and it was glorious). Decanted for an hour, which I highly suggest, as the additional airing opens up the secondary and tertiary characteristics. Drinking very nicely now, but could easily develop even more nuance over another five years.
