Tuesday, March 3, 2015 - decanted 45 min. dark red-maroon, to clear red at rim; dairy pasture, quite earthy, porcini, aged leather, animal; med+ body; dusty, dried plum & currants, earth & saddle leather, garrigue & a bit rustic still, maybe forever; tannins ebbed & flowed, as well as astringent acidity. really good to drink after a sequence of more refined(?) bottles over the previous few evenings. can age 5 - 10 more years readily.

roast pork loin, crushed fennel seed, thyme & red pepper flake, pan juices w/grainy mustard & tomato jam; creamy grits & collard greens
