Sunday, March 26, 2023 - What a convergence of gratifying contrast. Richly textured, saline lemonade. Incipient froth turns a tall, streaming pour white for a few seconds. NOSE: yeast; broth; pungent herbs—mustard, fennel, russet apple leaf. A mouthful is weighty with pulsing, skeletal muscle. Shamelessly sweet. Wildly arranged with resilient acidity. Meaty. I hear rattan complaining ironically about the weight. Milled stone grit dryly challenges invasive solar fat. Time and sense-adjustment allows cool, linear stone flavor to acknowledge its own abiding control over the experience.
IN SPITE of such proliferate stimulation and texture, this wine neatly occupies a claim on cleanliness and typicity. It remains approachable, and easy to grasp. Côte des Blancs-like. Yellow slack jaw juice.
Spicy tuna sushi roll cooperates with it.
