Saturday, May 27, 2023 - Stood upright for a day and a half. Quick 30 minute decant. Still a solid ruby core, fading into brick at the edges. Initially I get the expected mushroom/hoisin scents, but as this sits in the glass more aromas tease out: a stony/dusty scent. Dried cherries. Grilled herbs. A cedar/cigar interplay. Taking a taste, I'm surprised at how present the fruit is. We're talking more plummy than jammy, stewed rather than ripe, but it's still there. Still some acid left, I can't detect any tannins but I do get mint & tobacco on the lingering finish. Very much alive, if not on an upward trajectory. My first Diamond Creek, this was a real treat to drink.
