Monday, May 1, 2023 - Deep ruby color. Pronounced, youthful aromas of strawberry compote, vanilla, cinnamon, rose petal, cassis, plum, pencil lead. Full body, high alcohol, dry, high tannins, med(+) acidity, long finish. Fruit is ripe and oak influence is pretty prominent but the structure gives freshness and the wine is well balanced. Its abv is 15% and it is definitely hot, but it isn't unbalanced. Delicious now but will age to improve. Decant 2+ hours if opening anytime soon.

For pairing, lamb leg streak was decent pairing but the dish was a bit overwhelmed so lamb chop would have been better for this wine.

Day 3: Syrah is more on the front (cassis, dark cherry, violet, black pepper) though there is still red fruit component, and oak is more integrated (chocolate, tobacco) and aromas are much more complex with herby and savory notes (bay leaf, smoke, black olive). It almost tastes like a totally different wine to be honest compared to its first day, but it only confirms ageability of this wine.

For day 3 pairing, I tried with Italian sausage cassoulet, but wine was still overwhelming and sausage would go better with more structured wine like Bordeaux at the end. I'd say a good pair for this wine might be something like braised boar cheek and roasted lamb shoulder.
