Thursday, September 9, 2021 - Wasn’t sure this was going to be drinkable. Cork looked like it had been through a war and the ullage level was low shoulder. But wow, drinking beautiful. Big nose, still showing red fruit, leather, spice. Great acidity, tart cherry, Oolong tea, horse tack with a huge finish. Definitely drink up now though, this won’t last much longer imo. Served with a rabbit ragu over polenta which was a perfect match.
