Sunday, April 24, 2016 - A private lunch (Restaurant Epicure ***, Hotel Le Bristol, Paris): Ten months sur lie, no malo, no oak. Intense but lively colour, light for age; concentrated nose, ripe citrus and aromatic herbs, fresh as a daisy, powerful saline lift, lemon cream, waxy depth, hints of tropical fruit and flower honey; there is a lovely richness of fruit to the attack, the palate is dry but juicy and fresh, with crisp acidity and a whiff of sea air on the back palate; very good aromatic persistence on the long and complex finish. Has developed marvellously over two decades, incredibly youthful but now at peak.
